Chickpea Chocolate Chip Cookie Skillet

This month I made a gluten free, vegan, no added sugar chocolate chip cookie skillet and I'm SO proud of it I had to share!

I found this recipe on Instagram which includes:

  • 1 cup cooked chickpeas

  • 3 tbsp peanut butter

  • 1/4 cup maple syrup

  • 1.5 tsp vanilla.

Blend the above ingredients. Then add:

  • 1/4 tsp baking powder

  • 1/4 tsp baking soda

Blend again

  • 2 tbsp vegan chocolate chips

  • Flakey Salt for Topping

Bake in a Greased Skillet for 15 Minutes at 350 degrees.
